Knuspriges Krustenbrot und frischer Rucola mit gebratenem Gemüse- einfach köstlich!
Zutaten (2 Portionen):
1 1/2 Paprika, rot
1 1/2 Zucchini
1 1/2 EL Olivenöl
1 TL italienische Kräuter, getrocknet
Prise Salz und Pfeffer
1/2 EL Aceto Balsamico
50 g Rucola
4 Scheiben Krustenbrot
Veganer Brotaufstrich – Tomate-Basilikum
Zubereitung:

Ofen auf 180 °C (Umluft) vorheizen. Paprika waschen, vierteln, Strunk und Kerne entfernen und in breite Streifen schneiden. Zucchini waschen, Enden entfernen und leicht schräg in ca. 0,5 cm dicke Scheiben schneiden.

In einer Schüssel geschnittenes Gemüse mit Olivenöl und italienischen Kräutern vermischen und mit Salz und Pfeffer würzen. Alles großflächig auf einem Backblech mit Backpapier verteilen und im Ofen ca. 20–25 Min. rösten. Das Gemüse dabei hin und wieder wenden.

Fertiges Gemüse aus dem Ofen nehmen, etwas abkühlen lassen und in einer Schüssel mit Balsamicoessig mischen. Falls notwendig weiteres Olivenöl zugeben. Kräftig mit Salz und Pfeffer abschmecken.

Rucola waschen und trocken schleudern. 2 ungefähr gleich dicke Scheiben vom Krustenbrot abschneiden und beide mit veganem Brotaufstrich Tomate-Basilikum bestreichen. Eine Scheibe großzügig mit Gemüse und Rucola belegen und mit der zweiten Scheibe toppen. Vegane mediterrane Stulle mittig halbieren und im unteren Bereich mit Papier umwickelt servieren.
